Rose Tummarello of Edenton Ventures LLC called in Taffer and his Taffer Dynamics team to help her open her new waterfront bar and restaurant in Edenton, a charming and historic town on the Albemarle sound in Northeastern North Carolina.
"Jon's saved a lot of restaurants and bars from going under," Tummarello said. "He knows what it takes to turn around a bar and restaurant business and keep it running successfully.
"So I thought, 'Why not bring him in at the beginning, before we even opened, so we could do things the right way from the start.'"
The result is a new restaurant called The 51 House on the Edenton waterfront that opened on July 23rd.
The new restaurant's name is derived from the Edenton Tea Party of 1774, when Penelope Barker and 51 Colonial women stood up to King George III of England.
Taffer and his team are responsible for every aspect of the new restaurant's identity and operation – the concept, the design, the décor, the food and beverage menu, and the training of the restaurant staff.
"We've created a restaurant based upon their story, their time in history, their classic American cuisine and an authentic interior that reflects the time period of the late 1700s," Taffer said in an interview.
Taffer also recommended a complete facelift of the exterior of the three-story building, making it look like a Southern-style home, complete with porches front and back, shutters, and extensive landscaping.
The restaurant will be open for dinner each Tuesday to Sunday, with a signature Sunday brunch, Tummarello said.
For now, The 51 House will use only the first floor of the three-story building, but Tummarello ultimately plans to create a banquet facility on the second, and possibly a loft apartment on the third, she said.
