1 ripe mango
Extra virgin olive oil
First, fillet a large wild sea bass and cut into long, thin sheets (in the longitudinal direction). Arrange on a summer platter of your choice and sprinkle with salt to sweat the fish for about 10 minutes. 'Sweating the fish' simply means that you're setting the fish aside in your kitchen to allow it to get to room temperature.
After the appropriate time (whenever the fish is no longer cold to the touch), brush the sea bass with some delicately flavored extra virgin olive oil. Garnish the dish with some peppercorns and curly parsley.
