SEATTLE, Aug. 4, 2015 /PRNewswire/ -- Heartwood Provisions, a new restaurant featuring Contemporary American cuisine is currently under construction on First and Spring in the heart of downtown Seattle -- scheduled to open late Fall / Winter 2015. Heartwood is pleased to introduce Beverage Director Amanda Reed and our Chef Varin Keokitvon. Their focus is on artisanal offerings, seasonally inspired original cocktails, and unique food and beverage pairings.
Beverage Director Reed and Chef Varin have closely collaborated over the past year to develop new ways to experience food and beverage combinations. The beverage pairings are intentionally designed as the final component to each of Varin's dishes. "With these pairings, Chef Varin and I have strived to create combinations that create an enhanced dining experience," says Reed.
Reed's beverage program features a signature cocktail menu with an emphasis on seasonally inspired ingredients, including house made amari, syrups, tinctures and shrubs. Her wine program features Northwest, and old world wines. Reed also has assembled a unique selection of artisanal beers to showcase by the bottle and draft.
Chef Varin's thoughtful approach is demonstrated in how his menus are developed. "My goal when creating a dish is to find the balance of tastes, sensations and textures, where all elements of the dish and Reed's beverage selection can complement without competing. My food philosophy is constantly evolving as I love to push a technique or new ingredient to recreate a classic and turn it into something new," says Chef Varin.
Reed and Chef Varin are experimenting with new ways to showcase seasonal ingredients, using new and old techniques to create dishes and beverage pairings that are different and innovative, yet familiar. Chef Varin has been following his passion from an early age, whisking and dicing away at restaurants local and abroad. His career as a professional chef began at Elliott's Oyster House and Union Square Grill in Seattle. His last tenure before Heartwood was head chef of retail operations at Farestart where he trained homeless and disadvantaged adults and oversaw catering and restaurant accounts.
