Rich Melman Announces Lettuce Consulting Company

    CHICAGO, April 10 /PRNewswire/ -- Rich Melman, Chairman and Founder of
 Lettuce Entertain You Enterprises (LEYE), announced the growth and transition
 of the LEYE consulting division into a new consulting company -- the Lettuce
 Consulting Group.  Melman also announced officer promotions, new hires and new
 foodservice manufacturer services.
     Melman described the growth, "Our consulting division began in 1995 and
 has developed nicely with several exciting restaurant and foodservice clients.
 The response to our projects has been great and we see an opportunity to
 continue growing this side of our business."
     Melman named John J. Buchanan, a long time LEYE partner, President of the
 consulting company.  Buchanan had been instrumental in the formation of the
 LEYE consulting division and in managing its major projects.  "We have
 successfully completed a number of operations improvement, concept development
 and new product projects.  Basically, we apply our restaurant operating skills
 and philosophies to solving our clients' problems.  We work shoulder to

     Melman also announced the addition of Tom Miner to the consulting group as
