Sarah Todd, MasterChef Australia contestant, together with the brand new face of Italian cuisine - Executive Sous Chef Luca Digirolamo, presented an interactive cooking workshop for the city's food aficionados in the dramatic setting of the theatre kitchens at the Mansion's Oval Room.

Chef Luca, well versed in the nuances of Italian cuisine presented a menu that included recipes with a strong influence of the Tuscan-Umbrian cuisine, a selection of dishes exclusive to his region.

The menu included dishes like middle age fritters with pan fried parma ham glazed with balsamic vinegar, vegetarian sausage, prawn and lemon ravioli with Italian bisque and La Piazza signature melting chocolate dessert for a grand conclude.

The interactive culinary workshop ended over a delicious feast at La Piazza that fairly gave the city foodies a taste of the Tuscan-Umbrian cuisine and a glimpse of recipes that will soon fill up the chef's special menu at La Piazza.

About Chef Luca Digirolamo

Chef Digirolamo hails from the Umbria region of central Italy, an area known for its artistic legacy, beautiful landscapes, noble wines and excellent food. He is well versed in the nuances of Italian cuisine and will be responsible for putting a touch of Tuscan-Umbrian cuisine on the menu by adding a selection of dishes exclusive to his region.

Luca has an extensive culinary background. Having completed a five-year diploma from Hotel and Catering Activities School in Assisi, Italy in 1992, his first assignment as a chef de partie was at the Residence Perusia La Villa, Perugia, Italy. He then worked with several fine-dining restaurant chains and stand-alone venues. His first stint with an international hotel brand was with Hyatt® as the chef responsible for the Italian dining venue Tuscany at Grand Hyatt® Muscat in 2005. After this, there was no stopping him.

His most recent appointment was at the renowned Refectorium restaurant in Italy, a homestyle dining venue owned and operated by Chef Digirolamo himself. With a wealth of experience and skills gained under distinguished chefs, his career as a culinary artiste has seen him accept assignments in various parts of the world. Over the years he has sharpened his skills at many Italian fine-dining houses before arriving in the land of spices. Staying true to his lineage, he is all geared up to treat the Indian capital to delectable Italian dishes.
As a part of the culinary team at Hyatt Regency® Delhi, his responsibilities will include the creation of menus for both La Piazza and the Italian kitchen at The Mansion, the hotel's new event space. Additionally, he will be responsible for cost control; staff training; managing kitchen operations through active planning, direction and co-coordination; implementing new standards and procedures; and overseeing quality control through the purchasing and receiving departments.

Chef Digirolamo is a jovial, meticulous and down-to-earth person. He loves experimenting with dishes and appreciating new ingredients. In his spare time he likes reading, surfing the Internet and listening to music.
