Organic produce will be used when possible. Juices will be cold-pressed, unpasteurized and available in exotic flavors. Apura will also specialize in cold-brewed coffees and unique flavored nut mylks. The plant-based food menu will range from raw oatmeal for breakfast to faux sushi, specialty salads and other entrees for lunch and dinner.

A former financial executive, Mussaffi discovered plant-based cuisine in 2013. Experiencing the benefits firsthand, the mother of six began doing research and preparing new recipes at home. The Boca Raton resident is launching Apura to empower the community by demonstrating the link between what people eat and how they feel.
