Glad's Cookie Exchange Raises Dough for Pediatric Cancer Research

OAKLAND, Calif., Nov. 1, 2012 /PRNewswire/ -- This November and December, The Glad Products Company is encouraging consumers to bake a difference for Cookies for Kids' Cancer™, a non-profit organization that supports research for new and improved treatments for pediatric cancer through cookie exchanges and bake sales. Through the Glad® Holiday Cookie Exchange, Glad is turning cookies into currency by donating up to $1 for every cookie sent, sold or exchanged this November and December, up to $100,000.

Glad is encouraging consumers to send a virtual cookie to a friend at Glad.com or host a Cookies for Kids' Cancer Bake Sale or Cookie Exchange by registering the event and sharing how many cookies were sold or exchanged at www.cookiesforkidscancer.org. Since partnering with Cookies for Kids' Cancer in 2009, Glad has helped the nonprofit raise more than one million dollars for pediatric cancer research.

Cancer is the leading cause of death from disease in children between the ages of 1 and 19[1]. Yet pediatric cancer research receives less than three percent of The National Cancer Institute's federal budget[2]. Cookies for Kids' Cancer aims to spread awareness about this cause and inspire individuals, communities and businesses to "bake" a difference in the fight for a cure.

The New York Cookie Exchange
In celebration of National Cookie Day on December 4, 2012 and in conjunction with the 89th annual New York Stock Exchange (NYSE) Tree Lighting Ceremony, Glad is ringing in the holiday season by hosting a Holiday Cookie Exchange event on Wall Street to spread the word that cookies are the currency for giving back.

Together with businesswoman and mother, Ivanka Trump, and award-winning chef and head judge of Bravo's "Top Chef Just Desserts," Johnny Iuzzini, Glad will giveaway thousands of cookies, adorn the NYSE Tree and encourage consumers to exchange cookies to help raise funds for pediatric cancer research.

So whether it's sharing virtual cookies or edible ones like Johnny Iuzzini's recipe below, anyone can make a difference, one cookie at a time.

Lime Shortbread
Makes about 2 1/2 dozen 2-inch cookies

Ingredients:
2	sticks unsalted butter, cut into small cubes
2	finely grated zest limes
1	tablespoon fresh lime juice
1/2	teaspoon Kosher salt
2 1/4	cup all-purpose flour, plus more for rolling
1	cup confectioner's sugar

Directions:
1)	Put the butter into a standing mixer with the paddle and mix on medium-low until a thick paste forms with no visible butter lumps. Add the lime zest, juice, and salt and mix until well combined.
2)	Meanwhile, sift the flour and confectioner's sugar together. With the mixer on low, slowly add the dry ingredients to the butter mixture, stopping to scrape down the bowl as necessary. Mix until just combined.
3)	Turn the dough out onto a large sheet of plastic wrap and press it into a rectangle about ½-inch thick. Wrap the dough tightly in plastic and refrigerate until firm, at least 1 hour.
4)	Preheat the oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats. Remove the dough from the refrigerator and let stand for about 10 minutes.
5)	Lightly flour a sheet of parchment, unwrap the dough, and set it on the paper. Lightly flour the top of the dough and place another sheet of parchment over the top. Roll the dough to an even ¼-inch thickness and use a 2-inch cutter to cut out cookies and transfer them to the baking sheets, about 1 inch apart.
6)	Re-roll the dough as necessary to cut out cookies until the dough is used up. Freeze the cookies on the pan for 10 minutes.
7)	Bake the cookies, rotating the pans halfway through, until light golden brown on the edges, about 15 minutes. Cool on the pan for 10 minutes before transferring to a rack to cool completely. Store in an airtight container for up to 5 days.
