NEWPORT BEACH, Calif., Feb. 6, 2013 /PRNewswire/ -- Vibrant, fresh and flavorful describes Fleming's new tastes in a special winter menu inspired by peak of the season freshness.  Executive Chef Russell Skall has designed an innovative market-driven prix fixe, showcasing two courses at a special price of $40.95.  Wine Director Maeve Pesquera offers up a dramatic Margarita with flavors of the season - ruby pomegranate and herbaceous sage - combined with Milagro Silver Tequila for a brilliant colored and tangy-sweet cocktail that make a perfect start to the evening.

Guests begin with an appetizer of crusty crostini topped with housemade ricotta flavored with lemon zest and layered with juicy bosc pear slices drizzled with Meyer lemon honey and orange zest.
