Former Beef 'O' Brady's General Manager Louis Dirocco Takes Ownership of Restaurant in St. Cloud, Florida

The 26-year-old Mount Dora franchisee adds a second Central Florida location, continuing his path from managing a Beef 'O' Brady's to owning multiple restaurants.

ST. At just 26 years old, Dirocco has gone from working as a server and bartender to managing a Beef 'O' Brady's and now owning two locations across Central Florida.

Dirocco began his restaurant career at 15, working at McDonald's before becoming a shift lead at 16. He later spent four years at Keke's Breakfast Cafe before joining Beef 'O' Brady's under former Mount Dora owner Ed Conlan. After several years of learning the business and building relationships with employees and customers, Conlan approached him with an opportunity to purchase the restaurant.

"I've been a server, a cook, a bartender and a general manager. I can literally run every single position in the restaurant," Dirocco said. "It took me almost six years to build my reputation in this restaurant, and being able to purchase it and make it my own was just the cherry on top. I've been going to Beef 'O' Brady's since I was four years old, so I grew up in it, worked in it and already knew the people before I bought it."

With his family's support, Dirocco purchased the Mount Dora restaurant on Oct. 1, 2025.

"I was still hungry after purchasing the first restaurant," Dirocco said. "I called our area franchise director and told him to keep his ear to the ground if any locations came up for sale in Central Florida. He called me back about two weeks later with three locations, and St. Cloud was the best fit. It all happened so fast. My goal now is to keep building these restaurants, stay focused and eventually own four Beef 'O' Brady's locations."

For Dirocco, one of the biggest draws of Beef 'O' Brady's is its family-friendly atmosphere and established operating model. Having spent years working inside the system, he entered ownership with a strong understanding of the brand's operations, customer expectations and community-focused approach. "This is not easy. The work we do inside these restaurants is not light by any means, and there are a lot of high-stress situations we have to handle," Dirocco said.
