WESTPORT, Conn., Oct. 21, 2015 /PRNewswire/ -- Newman's Own today announced Robbin Wagner of Tinley Park, IL as the grand prize winner in its "Greens for Good" salad recipe contest, a contest that reflects the philosophy of the brand's founder, Paul Newman: making great tasting food for the benefit of charity. A $35,000 donation will be made, based on Robbin's recommendation, to Operation Family Fund, a non-profit organization supporting wounded military veterans and their families. Wagner's winning recipe was a "Crunchy Thai Chicken Quinoa Salad" featuring Newman's Own Sesame Ginger dressing.
"I chose Operation Family Fund because I want military families, like the ones that surround me, to be able to keep their homes, have a pantry of food and be able to pay their bills," said Wagner. "I am thrilled that I had the opportunity to create a salad recipe that is making a difference in people's lives."
Wagner's winning salad recipe includes chicken, tri-colored quinoa, red bell pepper, shredded red & white cabbage, carrots, cucumber, cilantro, onion, peanuts, honey, hot chili sauce and Newman's Own Sesame Ginger dressing. The full recipe can be found below.
"Robbin's entry inspired us - she delivered a great tasting salad recipe that benefits the greater good, a perfect fit with Paul Newman's vision," said Bruce Bruemmer, Vice President of Marketing, Newman's Own, Inc. "Based on Robbin's nomination, we are proud to make a $35,000 donation to Operation Family Fund to help make a difference in our military community."
Contestants were required to enter their recipe along with a description of their nominated charity of choice. Contest entries were judged by Chef Hugh Acheson and Newman's Own for taste, creativity/innovation of recipe and inspiration for selection of charitable organization. Ten finalists were chosen for public voting, which accounted for 10 percent of the overall score.
Newman's Own, Inc. will award a total of $44,000 in charitable donations to the 10 finalists. Along with the $35,000 grand prize, Newman's Own is making $1,000 donations to the charitable organizations that were nominated by the remaining nine finalists:
The Winning Recipe
"Crunchy Thai Chicken Quinoa Salad" with Newman's Own Sesame Ginger dressing
Ingredients
CHICKEN: 2 Chicken Breasts, 2 tablespoons Newman's Own Sesame Ginger Dressing, 1 teaspoon Vegetable Oil Salt & Pepper to taste
SALAD: ½ cups Water, ½ cups Uncooked Tri-colored Quinoa, 1 tablespoons Newman's Own Sesame, 1 Red Bell Pepper, diced 1 cup Shredded Red Cabbage, 2 cups Shredded Green or White Cabbage, 1 cup Shredded Carrots, 1 small English cucumber, halved lengthwise, seeded and thinly sliced, ½ cups Chopped Cilantro, ½ cups Roasted Salted Peanuts, ¼ cups Diced Green Onions, 1 Fresh Lime cut into 6 wedges
DRESSING: ¼ cups All Natural Peanut Butter, ¼ cups Newman's Own Sesame Ginger Dressing, 2 tablespoons Honey, ½ - 1 teaspoon hot chili sauce, depending on how spicy you would like it, 1/8 teaspoon salt, 2 teaspoons water, to thin.
Instructions
Preparation: Chicken: Marinate the chicken breasts in Newman's Own Sesame Ginger Dressing for at least an hour or overnight. Pat chicken dry and season with salt and pepper. In a 12-inch nonstick skillet heat oil over moderately high heat until hot but not smoking and saute chicken 3 minutes, or until golden. Turn chicken over and sauté 1 minute more. Reduce heat to moderately low and cook chicken, covered, until just cooked through, about 10 minutes. Set aside until cool enough to handle. Shred chicken with two forks.
Quinoa: In a small sauce pan, bring water to a boil. Add salt to the water. Add quinoa and bring mixture to a boil. Cover the pan, reduce heat to low and let it simmer for 15 minutes or until quinoa has absorbed all of the water. Remove pan from heat and fluff quinoa with fork. Place in a large bowl and mix-in 1 tablespoon of Newman's Own Sesame Ginger Dressing and set aside to cool for about 10 minutes.
Dressing: Add peanut butter and honey into a medium-sized microwave safe bowl. Heat in the microwave for 20 seconds. Add the chili sauce, salt and water to the peanut butter mixture; whisk until smooth. Set aside.
Salad: In a large bowl, toss together the shredded chicken, quinoa, red bell pepper, green cabbage, red cabbage, carrots, cucumber, and cilantro. Top with peanuts and green onions. Add enough dressing to coat. You can store any remaining dressing in the refrigerator for future use. Serve chilled or at room temperature with lime wedges.
