Featuring the rare Ipponjime rice – once overproduced to extinction and now one of the rarest varieties grown locally – alongside Gohyakumangoku, a classic Niigata rice varietal, two meticulously selected yeast strains, and snowmelt-pure water gathered from the top of Mount Sumon, the expression reveals a distinctive, layered flavor profile that evolves sip by sip.
