The promotion, which culminates on National Salmon Day on Oct. 8, consists of daily drawings and one final Grand Prize drawing. Daily prizes include Andie Mitchell cookbooks and "Salmon & Rice Perfect Pairing" swag packs from the makers of Minute Rice and Chicken of the Sea. One Grand Prize winner will be randomly selected to receive a seven-day cruise to Alaska for two people.

RECIPE: Black Bean and Barbecue Salmon White Rice Tacos

Ingredients
1 cup Minute® Ready to Serve White Rice
¼ cup romaine lettuce, shredded
¼ cup canned black beans, rinsed
1 (2.5 ounce) pouch Chicken of the Sea® Barbecue Pink Salmon
¼ cup cheddar cheese, shredded
2 green onions, chopped
2 premade taco shells

Directions
Heat rice according to package directions.
Place lettuce, beans, rice, salmon, cheese and onions in taco shells. Serve immediately.
