The two developments perfectly embody an idea deeply rooted in the company's history: family as the generative force, guardian of memory and driver of change.
The Family Factor: CÀ Metodo Classico and the Future of the Next Generation
The launch of CÀ marks a deeply emotional moment for the company. The name "CÀ" is derived from Carlotta, daughter of Marzia Varvaglione, who officially represents the fifth and future generation of winemakers in the family. The wine completes the range of products that Cosimo Varvaglione and his wife Maria Teresa have dedicated to each member of their family.
In an industry where time sets the pace, dedicating this sparkling wine to Carlotta allows Varvaglione 1921 to reaffirm its vision: one in which the wisdom of its origins intertwines with the desire to evolve, placing its faith in future generations to preserve its winemaking heritage intact.
For the winery in Taranto, generational succession has been a successful and forward-looking investment, with Marzia leading business development, Angelo overseeing agronomy and sustainability, and Francesca developing her skills as an enologist alongside her father.
The new Metodo Classico, the company's first experiment with this production method, marks a new stage in Varvaglione's journey toward maturity. CÀ embodies a promise of vision and the future — a wine that requires time, care and precision, much like the growth of new generations.
The grapes used to produce CÀ come from the Masseria Pizzariello cru, located in S. Donato, specifically from parcels 561–318. Locally known as "Campo Freddo" ("Cold Field"), the area is cooler than the surrounding zones. The significant temperature variation between day and night helps preserve the grapes' freshness and aromatic character.
At first light, the Fiano grapes destined for CÀ are hand-harvested and carefully selected into small 15-kg crates to preserve their integrity. The bunches are then placed in a refrigerated room for approximately 18 hours to preserve their freshness and aromatic profile.
The grapes are subsequently loaded into a whole-bunch press. Gentle pressing yields exclusively the free-run juice, avoiding the extraction of tannic compounds from the stems and preserving the fruit's aromatic and gustatory elegance.
The resulting must is transferred to a temperature-controlled tank at 10°C, where static settling takes place. After approximately 24 hours, the clear must is racked.
Alcoholic fermentation takes place at a controlled temperature of 18°C. Once fermentation is complete, the wine remains on its fine lees for eight months, with frequent bâtonnage. The extended contact with the lees enhances the wine's structure, complexity and depth.
This is followed by the traditional tirage, with the addition of sugar and selected yeasts to initiate the second fermentation in the bottle according to the Metodo Classico method.
The wine then continues to age on its lees for approximately 20 months, allowing its aromatic profile to evolve progressively while gaining greater finesse and expressiveness. The process concludes with disgorgement and the addition of the liqueur d'expédition.
Casino Nitti: A Story Between Two Lands
Casino Nitti, the historic stone hunting lodge built around 1550, has now become part of the Varvaglione world. Set within more than 70 hectares of land overlooking the Ionian Sea, the estate embodies a fascinating cultural challenge: bringing together two of Southern Italy's great wine regions under a single corporate vision — Puglia and Campania.
Casino Nitti will showcase the native grape varieties of both regions: on one side, the quiet strength of Primitivo, Negroamaro and Susumaniello; on the other, the volcanic elegance and minerality of Greco di Tufo, Aglianico, Fiano di Avellino and Falanghina.
The Heart of the Project: The Vineyard of Biodiversity
At the heart of the Casino Nitti estate lies a pioneering scientific initiative: the experimental vineyard, renamed the "Vineyard of Biodiversity."
The site is home to more than 500 minor and Balkan grape varieties, with a particular focus on varieties originating from the Caucasus and Mediterranean regions.
The project, developed in close collaboration with researchers from the University of Milan and the University of Salento, focuses on research and sustainable innovation. Its dual objective is to study the adaptability of rare and ancient grape varieties to the effects of climate change in the Mediterranean environment and to explore new rootstocks.
