In the new streamlined curriculum, students begin with the Decorating Basics course and then progress to their choice of either Flowers and Cake Design or Gum Paste and Fondant.  In all three courses, students work with a lesson book featuring step-by-step written instruction and corresponding full-color photos.  Each class includes time for interactive learning and hands-on practice with Wilton cake decorating tools and products under the guidance of experienced instructors.  Lessons from the books include: cake baking fundamentals; icing preparation; selecting complementary colors using a color wheel; writing messages; creating flowers and borders; and covering cakes with fondant.

The Wilton School of Cake Decorating and Confectionery Art, located in Darien, Ill., held its first class in 1929.  In 1975, a curriculum was created for local craft and specialty stores nationwide, making The Wilton Method® classes more accessible to more people.  These classes have attracted more than 4 million students.
