Digesting the Data
Lactose is a milk sugar and requires the enzyme lactase for digestion, which decreases with age. Globally, 33 percent of people are lactose intolerant—40 million of which are Americans—and only 40 percent of people maintain the ability to digest lactose after childhood. A milk allergy, on the other hand, involves an immune response to casein and/or whey, which are milk proteins and common allergen triggers, especially in children.
