Dale Talde's Korean BBQ Pork Chop with Quick Kimchi Recipe

1 package Annie Chun's Maifun Brown Rice Noodles |
|
4 cups cold water |
|
2 gallons boiling water |
|
2 cups ice water |
|
3 eight-ounce pork chops |
|
4 Tbsp. Annie Chun's Korean Barbeque Sauce |
|
1 tsp. vegetable oil |
|
1 tsp. salt |
|
1 each – fresh peach, plum and nectarine (sliced) |
|
4 Tbsp. Annie Chun's GoChuJang Sweet & Spicy Sauce |
|
2 tsp. fish sauce |
|
2 tsp. rice vinegar |
|
1/2 tsp. salt |
|
Directions:
- Marinate pork chops in GoChuJang sauce for at least 4 hours
- Soak brown rice noodles in cold water for 30 minutes and cook according to package instructions. Place immediately into ice water to shock. Let sit for one minute, strain and dry in a colander.
- Oil barbecue grill. Over medium to high heat, place marinated pork chops on at a 45-degree angle. Salt. Let cook for 4-5 minutes, turn another 45 degrees and cook another 4-5 minutes to obtain perfect hatch marks. Repeat for the other side. Reduce temperature to medium-low, close grill and cook to desired doneness at about 145-150 degrees internal temperature.
- Prepare Summer Fruit Kimchi: Combine GoChuJang sauce, fish sauce, salt, and rice wine vinegar in a bowl. Add sliced peaches, nectarines and plums and combine.
- Place cooked noodles on a plate, add warm Korean barbeque sauce over noodles, and place sliced pork over the top.
- Serve with Summer Fruit Kimchi on the side.
