Yeo explains, "Simmering is a technique we use with the majority of our curry dishes, and many others. We place all the fresh herbs, seasonings and stock into a large tilt skillet and mix well until the liquid becomes hot just below boiling point, then we add the meat. Simmering renders a broth that becomes a rich flavorful sauce over several hours, naturally enhancing flavors of all the ingredients and ensuring meat is tender and succulent!" He adds, "This is a great technique to bring out flavors of the season – and with practice, anyone can do it!"
