Lamb is for Lovers this February

DENVER, Jan. 28 /PRNewswire/ -- This February, the American Lamb Board is calling all lamb lovers to share their surefire recipes for romance with a month-long celebration and contest.  From February 1 – 28, www.americanlamb.com will feature recipes to woo your loved ones, whether it is a show-stopping rack or a tender loving loin, and invite fans of lamb to submit their own tried-and-true dishes.

Starting today, twosomes can submit their own swoon-worthy recipes and a short 200 – 300 word essay about why they love lamb by:

Each Friday in February, a new winning recipe will be announced on Facebook and Twitter, @FANofLAMB and featured on www.americanlamb.com.  Every couple that submits a recipe and essay will receive American Lamb goodies and be entered to win the ultimate lamb lovers care package filled with lambtastic finds such as two racks of lamb, lamb rub, lamb-shaped cutting board, Lamb is for lovers apron and more.

Lamb lovers looking for inspiration this Valentine's Day can pull from American Lambassador and Chef Tim Love's American Lamb Loin Chops with Red Chile Grits, see recipe below.

American Lamb Loin Chops with Red Chile Grits

2 - 5 oz. American Lamb Loin Chops

2 oz. olive oil

1 cloves of garlic, minced

Kosher salt to taste

Cracked black pepper to taste

• Heat cast iron or heavy bottomed sauce pan over medium-high heat until hot and barely smoking
• Brush lamb chops with olive oil and minced garlic
• Season liberally with salt and pepper
• Place on pan for 3 minutes a side or until medium-rare
• Remove lamb chops from pan and let sit uncovered for 5 minutes
• Serve with creamy red grits

Red Chile Grits

2 tablespoon olive oil

3 fire roasted red bell peppers, skins peeled and seeded, medium dice

4 cloves roasted garlic

1 small red onion, medium dice

1 tablespoon butter

4 cups chicken stock

1/4 cup heavy cream

1 cup grits

2 cups shredded manchego cheese

1/4 cup chopped chives

Salt and pepper to taste

• In a hot saucepot, add olive oil, roasted peppers, garlic and onion
• Stir until well incorporated then add butter
• Melt the butter down then add chicken stock, cream, and bring to a boil
• After liquid comes to a boil, turn down the heat to medium-low and stir in grits and cheese
• Keep stirring thoroughly until the grits are cooked all the way
• Add chives and salt and pepper
