DosSantos pointed out that his products are fresh from the start because they are flash frozen at temperatures as low as -40 degrees Fahrenheit, as opposed to the regular 0 degrees in a regular refrigerator. "When products are flash frozen, the water content inside the food tissue freezes rapidly, forming much smaller ice crystals than in traditional freezing methods," DosSantos said. "Smaller crystals preserve the tissue and enhance the flavor and freshness."
