"Olives Soffritte" Appetizer Adds Healthful Taste to Last-minute Thanksgiving Plate and Palate

ORLAND, Calif., Nov. 27, 2013 /PRNewswire/ -- Tomorrow is Thanksgiving and cooks across America may be seeking an easy-to-make, tasty appetizer to add to their day of thanks meal. West Coast Products-Olinda Brand and its client, Farwood Bar & Grill, both of Northern California, proclaim "Olives Soffritte" to be a simple last-minute menu item. It uses the Olinda Brand naturally grown and processed green Sicilian olives and is a staple at the Farwood restaurant.

Ingredients needed for the "Olives Soffritte" appetizer are: 1/2 cup Olinda Brand Extra Virgin Olive Oil (EVOO); 1/3 cup Soffritte Mix (see below); 24 Jumbo Olinda Brand Green Sicilian Olives; 12 Olinda Brand Greek Sundried Olives (pitted); and 1 teaspoon of the Olinda Brand Seasoning Blend.

In a saute pan over low heat, add EVOO, Soffritte Mix, and olives. Optional: some prefer to have the olives roughly chopped so they can be spooned or scooped onto the bread, like bruschetta. Warm the entire mixture through. Add garlic and saute until aromatic, about one minute. Add the Olinda Brand seasoning blend and stir. Remove from heat. Serve with grilled French bread.  

For the Soffritte Mix, be sure to small dice vegetables (1 yellow onion, 2 ribs celery, 2 carrots) and then saute in 2 tablespoons of Olinda Brand EVOO until soft.

A little background on Soffritto (Soffritte is the plural): The Italian version of mirepoix is called Soffritto. According to the American reference work, The Joy of Cooking, an Italian Soffritto is made with olive oil, especially in Southern Italy, rather than butter.
