Sophie's is a family operated business. President, Sofia Luna, co-founded the Sophie's Cuban Cuisine restaurants in Manhattan with her mother, Manuela Matos, in June 1997. She attended the hotel and restaurant management program at St. John's University in Queens, New York while also working full time running the restaurant business. Manuela serves as Secretary for the company. Ms. Matos has spent the preceding 40 years in the restaurant business, including in her native country of Peru.

Jason Cestero, who has been the manager of Sophie's Chambers Street restaurant for several years and is part of the family, has the new assignment of making the 6th Avenue Sophie's a great success. A Sophie's Cuban Cuisine Restaurant is very much a neighborhood kind of place, but in an urban setting. The Sophie's Restaurants are designed to feel like Little Cuba where the food tastes as if it were made at home, is plentiful, and the service is quick and friendly. The menu is kept very simple with a limited number of Cuban entrees, some daily specials, sandwiches, appetizers, and side dishes.
Sophie's Cuban Cuisine is founded on the principle that everyone deserves a good, high-quality meal without the high prices associated with most mid-town restaurants.
The restaurant is targeted to a broad spectrum of patrons including business people and blue collar workers, you are likely to find young people, old people, white collars, blue collars, construction workers, guys and girls all together; all enjoying a fresh, value priced quick service hot meal. Designed with a sparse décor reminiscent of the restaurants you would find in Cuba, Sophie's starts each day with completely fresh handmade dishes to delight its guests.
The restaurants offer freshly made, savory, authentic Cuban specialties such as Ropa Vieja (Shredded Beef Stew), Camarón al Ajillo (Shrimps In Garlic Sauce), Maduros (Fried Sweet Plantains), Papa Rellena (Mashed Potatoes Stuffed With Ground Beef Stew), Ox Tail Stew, plenty of Arroz con Frijoles (Rice and Beans), and of course, the traditional Cuban Sandwich.
