At Santiago's Borago, ranked among Latin America's top 10 restaurants, Guzman brings to life the varied flavors of Chile in Santiago's hottest tradition-oriented kitchen. This inventive chef traverses all 2,700 miles of Chile's diverse terrain, seeking new ingredients to enliven Borago's dishes, which are prepared in traditional Chilean style — cooked on hot stones and smoked with native woods.
