Pour on setting one (1) and achieve the equivalent of one hour of aeration. This is ideal for more mature wines, generally those over eight years old, which are mellow and need to breathe for a shorter period of time.
For younger red wines, which tend to be higher in tannic acid and require the equivalent of more time for the tannins to mellow, twist to setting three (3), four (4), or five (5) to introduce more air to the wine.
