Don't Bid Farewell to Comfort Food: Popular Self-Trained Chef and Internet Personality Kelly Bejelly Cooks American Favorites, Paleo Style, in New Cookbook
PORTLAND, Ore., Dec. 26, 2014 /PRNewswire/ -- The Paleo diet has become certifiably mainstream. However, the perceived lack of so-called comfort food continues to discourage some from giving the diet a chance. Enter self-trained chef Kelly Bejelly (http://www.agirlworthsaving.net/), ready to change that perception with her first cookbook, "Paleo Eats: 111 Comforting Gluten-Free, Grain-Free and Dairy-Free Recipes for the Foodie in You." Comfort food – it's the delectable, carb-rich stuff that is the centerpiece of the American diet. But it's also the sort of food that wreaks havoc on those with metabolic disorders, such as diabetes. The Paleo diet provides an alternative to less-than-healthy eating habits, but it doesn't mean giving up on classic favorites. "Paleo Eats" includes recipes like chicken potpie, green bean casserole and apple pie, all gorgeously illustrated and carefully explained so that even kitchen novices can produce incredible food for an entire family.
In addition to over 100 satisfying recipes, Bejelly shares kitchen advice that can turn anyone into a Paleo master. From baking tips and recipe troubleshooting to a summary of kitchen essentials, "Paleo Eats" is a fact-filled, convenient reference work.
"Paleo Eats" is aimed not only at those experienced with the Paleo diet, but newcomers as well. Bejelly makes the transition to Paleo feel almost effortless, whether it's for a specific medical reason or simply a dietary choice.
Fellow self-trained chefs and Paleo enthusiasts have heaped praise on Bejelly's first publication: "The kind of recipes and style of photography in this book are, in a word, cozy," said Kelly Brozyna, author of "The Paleo Chocolate Lovers' Cookbook." "It's the kind of food and the kind of feeling I want to have in my kitchen and at my table."
Stacy Toth, author of "Real Life Paleo" and creator of Paleo Parents, was equally congratulatory: "With a family-friendly approach, Paleo Eats offers a wide array of recipes you will be thrilled not to have to give up any longer! From Cherry Toaster Pastries to Bucha Onion Rings, there is something for everyone in Kelly Bejelly's debut book!"
About the Author
When Kelly Bejelly was told that she was pre-diabetic in 2009, she tried the Paleo diet in a last-ditch effort to cure herself. Within six months, she lost sixty-five pounds, normalized her blood sugar levels, and won her battle with anxiety and depression. She then began experimenting with grain-free recipes in an attempt to convince her picky-eater husband that giving up gluten was not a life sentence to a tasteless existence. Now Kelly shares Paleo comfort food recipes on her website, A Girl Worth Saving, and proves that you can still enjoy your favorite recipes without grains, gluten, or dairy. Kelly lives in Portland, Oregon, with her husband and son.
